Mr. Make It Happen LOBSTER MASHED POTATOES RECIPE


SHOPPING LIST:

  • 2 lbs russet potatoes

  • 2.5 oz Boursin cheese

  • 4 tbsps butter

  • 2 cups half and half

  • 1 tbsp garlic 1-2 tbsps sour cream

  • 1/2 cup shredded parmesan cheese

  • AP seasoning

  • Fresh thyme

  • Diced chives

  • 2 tbsps roasted garlic

  • 6 oz lobster meat

DIRECTIONS:

Roasted Garlic

  1. Cut the end pieces of your garlic, and peel some of the skin away (keep the end pieces)

  2. Get a sheet of foil and place the garlic on the sheet. Add some olive oil (or oil of your choice) with some salt, pepper, or my AP Seasoning, wrap the cloves in the foil tightly, and put them in the oven at 400 degrees for about 40 min

Mashed Potatoes

  1. After you've peeled and diced your potatoes (the smaller the potatoes the faster they will cook) Be sure to wash your potatoes until the water runs clear

  2. Add your chopped potatoes to the pot and boil them in the chicken broth or you can boil them in water with salt until soft

Lobster Topping

  1. In a skillet over medium heat, melt about 1/2 stick of butter Once partially melted, add in the roasted garlic and mash it into the butter

  2. Next, add the lobster meat (I use claw meat) and break it up to your liking (I leave some chunks so you can know it's there)

  3. Add in a little parsley and some of my Lemon Bae Seasoning (Tony C's, Lemon Pepper, or other seasonings of your choice) Since lobster is pre-cooked we just want to warm it up in the skillet, don't overcook it

Cream Mixture

  1. Warm a skillet over medium heat and add some butter and the heavy cream, along with the Garlic, Boursin Cheese, 2 tbsp of sour cream, and season with salt and pepper or my AP Seasoning. Bring the Cream Mixture to a simmer and taste as you go.

  2. Get out your potato masher and mash your potatoes (make them as lumpy or smooth as you like)

  3. Once it's at your desired thickness, you can add some cream in a little at a time and be sure to mix and taste as you go

  4. Optional: Add some lobster chunks in the mashed potato mixture

  5. Top the Lobster Meat that you made over your mashed potatoes and garnish with some parmesan cheese and diced chives if you'd like and you're ready to eat!
