1.5 lbs butter beans

3 tbsps all purpose flour
1 onion
1 tbsp low sodium better than bouillon chicken base
6 cups chicken broth (low sodium)
1 tbsp hot sauce

AP Seasoning
2 tbsps garlic
Cornbread:
2 boxes jiffy corn muffin mix
2 eggs
2/3 cup whole milk
3 tbsps melted butter
2 tbsps sugar
1 pinch of salt + honey butter (optional)

Preheat your oven to 350°F (175°C) for the cornbread.
COOKING INSTRUCTIONS - CORNBREAD
In a mixing bowl, combine 2 boxes of Jiffy corn muffin mix, 2 eggs, 2/3 cup of whole milk, 3 tablespoons of melted butter, 2 tablespoons of sugar, and a pinch of salt. Mix until just combined.
Pour the cornbread batter into a greased baking dish or muffin tin. Bake in the preheated oven at 350°F for about 20-25 minutes or until the cornbread is golden brown and a toothpick inserted into the center comes out clean. Set aside.
Optionally, prepare honey butter by mixing softened butter with honey to taste. Set aside for serving.
COOKING INSTRUCTIONS - SMOKED TURKEY OR PORK W/ BUTTER BEANS
In a large pot or Dutch oven, melt a stick of butter over medium heat.
Add 3 tablespoons of all-purpose flour to the melted butter. Stir and cook for about 2-3 minutes to make a roux.
Add the diced onion and minced garlic to the pot. Sauté until the onion is translucent, which should take about 3-5 minutes.
Stir in the low-sodium Better Than Bouillon chicken base, hot sauce, Worcestershire sauce, and some all-purpose (AP) seasoning.
Add the smoked turkey or pork to the pot and cook for about 5-7 minutes, allowing it to brown and infuse flavors.
Pour in 6 cups of low-sodium chicken broth and bring the mixture to a simmer. Cook for about 10-15 minutes to let the flavors meld together.
Stir in the butter beans and continue to simmer for an additional 10-15 minutes or until the butter beans are tender.
Taste the mixture and adjust the seasoning if needed with more AP seasoning, hot sauce, or Worcestershire sauce
SERVING
Serve the smoked turkey or pork with butter beans in a bowl, garnished with fresh herbs if desired.
Accompany the dish with a slice of cornbread and a dollop of honey butter, if desired.
