Shopping List:
(1) 8-11lb spiral sliced ham
2 cups orange or pineapple juice
1 orange
3-4 cinnamon sticks
Glaze: (double the recipe for extra glaze)
1/2 stick melted butter
1/4 cup brown sugar
1 tsp ginger paste
1/2 cup good quality honey
Nutmeg and allspice cinnamon to taste AP Seasoning
Sugar & Spice Rub:
1.5 cups white sugar zest of
1 orange
1 tsp AP seasoning
1/2 tsp nutmeg, allspice, cinnamon
1/2 tsp ground mustard
DIRECTIONS
Get A Nice Size Roasting Pan with a wire rack or a foil pan if you don't have a wire rack so the ham is not submerged in the liquid
Add Enough Orange Juice to cover the bottom of your roasting pan along with a few sliced oranges
Warm a skillet over medium heat and add about 1/2 stick of butter and add 1/4 cup of brown sugar, 1tsp of ginger paste, 1/2 cup of the best quality honey you can find, and decrease the heat and mix until it forms a syrup or glaze consistency
Add a pinch of nutmeg, allspice, and cinnamon, and a little of my AP Seasoning or salt, pepper, garlic, and onion powder.
Glaze Your Ham with the mixture you've created and leave some to baste while cooking if you'd like. Be sure to glaze in between the slices of your ham
Once it has been glazed, cover it in foil and place it in the oven at 325 degrees for 20 min per pound
Sugar & Spice Rub (optional)
Put 1 1/2 cups of white sugar and the zest of an orange in a bowl with a tsp of my AP Seasoning or salt, pepper, garlic powder, onion powder, 1/2 tsp of nutmeg, 1/2 tsp of cinnamon, 1/2 tsp of all-spice and a pinch of ground mustard and mix items together
For the final 30-40 min of cook time, take your ham out and let it sit for about 10-15 min, and then add the All-Spice Sugar Rub onto your ham so it can carmelize and place it back in the oven.
Cook for about 10-15 min. Be sure to watch your ham based on the type of oven you have as you do not want it to burn.
Optional* Pour the rest of your honey glaze on the ham if you'd like and you're ready for your Money Shot!
