  • 1.5-2lbs fresh green beans

  • 1 onion

  • 1 tbsp low sodium chicken base

  • 1 tbsp garlic

  • 4 cups chicken broth

  • AP seasoning

  • smoked paprika

  • 2-3 tbsps butter


DIRECTIONS FOR SOUTHERN STYLED GREEN BEANS RECIPE PREPARATION:

  1. Preheat your skillet over medium heat.

  2. Steam or blanch the green beans until they are tender yet still crisp. Drain them and set them aside.

  3. Wash and dice the red potatoes into small cubes.

  4. Finely chop the onion.

  5. Crumble the cooked bacon into smaller pieces.

COOKING INSTRUCTIONS
  1. Preheat your skillet over medium heat.

  2. Add the thick-cut bacon to the preheated skillet and cook until it becomes crispy. This will take about 5-7 minutes. Remove the bacon from the skillet, place it on paper towels to drain excess grease, and crumble it into smaller pieces. Set the bacon aside.

  3. In the same skillet, reserve about 2 tablespoons of bacon grease. If there's too much grease, you can remove some.

  4. Add the diced red potatoes to the skillet and cook them in the bacon grease over medium heat. Season them with all-purpose (AP) seasoning, smoked paprika, salt, and black pepper. Stir occasionally and cook until the potatoes are golden brown and tender, which will take about 10-15 minutes. Remove the potatoes from the skillet and set them aside.

  5. In the same skillet, add the chopped onion and minced garlic. Sauté them until the onion becomes translucent, which should take about 3-5 minutes.

  6. Return the cooked potatoes to the skillet and add the chicken broth and low-sodium chicken base. Bring the mixture to a simmer and cook for about 10-15 minutes, or until the potatoes are fully tender.

  7. While the potatoes are simmering, steam or blanch the green beans until they are tender yet still crisp. This should take about 4-5 minutes. Drain them and set aside.

  8. Once the potatoes are tender, add the green beans and crumbled bacon to the skillet. Stir everything together and cook for an additional 2-3 minutes to heat the green beans through.

  9. Just before serving, add 2-3 tablespoons of butter to the skillet, allowing it to melt and coat the vegetables and bacon. Adjust the seasoning with salt, black pepper, and additional smoked paprika if needed.
